Winemaker's Notes
Essentially, this is Tom Klassen’s project ‘Hibou de Nuit,’ a dry-Alsatian style wine. I had a very small role in the project as a den-mother and janitor when either one was needed. I did talk Tom into blending the 2010 and 2011 vintages as the 2010 from a warm year was opulent but lacked verve while the 2011 was all about verve but needed a bit more allure. It was a heavenly match.
The wine today is lychee, golden delicious apple, home-canned peaches, a touch of aged terpene (what I look for in 10-year old German Kabinett Rieslings as their sweet spot) on the nose. On the mouth, it delicately slides across the palate bringing all these lovely aromas into the entire olfactory system. Gentle, persistent, attractive and balanced, this will be perfect with, before or after holiday meals. Multiple bottles will likely be opened.
